Interesting facts: True Star Anise (Illicium verum) is an evergreen tree with elongated, leathery leaves and pale bark. Its magnolia-like flowers range from creamy yellow to pink. All parts of the plant have a pleasant aniseed fragrance. Its woody fruit consists of distinctive eight-pointed star-shaped pods.

Star anise has been known in China for around 3,000 years as both a medicinal and culinary plant. It was only introduced to Europe in the 16th century. Today, it is particularly popular in Christmas baking, gingerbread, liqueurs and mulled wine. It is also widely used in Asian cuisine to flavour meat dishes. In traditional medicine, it has been used to help relieve coughs and digestive discomfort.

Origin: Native to southern China, Vietnam and Thailand.

Growing from seed: Before sowing, leave the seeds to soak overnight in a damp cloth. Then plant them approximately 1 cm deep in moist seed compost or sandy soil. Alternatively, allow them to germinate in the damp cloth before carefully transferring them to soil. The ideal germination temperature is 22–27°C. Keep the growing medium slightly moist, but avoid overwatering to prevent mould from developing.

Light/Position: Prefers a warm, bright location with high humidity. A greenhouse, conservatory or warm indoor room is ideal. Regular misting is recommended.

Watering and care: Use standard multipurpose potting compost. Once the seedlings have developed 2–3 leaves, they can be transplanted. When the plant reaches approximately 40–50 cm in height, cutting it back by about one third is recommended to encourage side branching.

Fruiting: Star anise is a slow-maturing tree. The first fruits usually appear only after approximately 15 years, so initially you can enjoy its attractive appearance and pleasant fragrance.

Winter care: Continue watering and misting regularly throughout the winter. Do not allow the soil to dry out completely.
